We need to use 3 different products to make this flavour; Biscottino paste, Cookies variegate and Cookies biscuits.

Weigh out the quantity of products needed to prepare the flavour.
Add the Biscottino paste to the white base mixture and blend thoroughly. Pour the mixture into the batch freezer and turn it on.

After about 8 minutes, place a pre-cooled tub under the machine and start to remove the contents.
Remove part of the gelato and pour the Cookies ripple onto it, using a hard spatula to ensure it is distributed evenly.

At this stage, remove the remaining gelato.
Repeat the operation, pouring the remaining Cookies variegato evenly over the gelato removed.

Decorate the tub using a spatula.
Crumble some Cookies biscuits over the tub of gelato and add some biscuits as decoration.

The gelato is now ready.
