Gelato Base - Hot preparation
tag: utility, For the hot preparation of white base mixes we need to use:
- Sugar
- Soave base
- Milk
- Cream
Place the sugar and Soave base in a container and mix together well.
Now pour the milk into the pasteurizer and turn it on to start the process.
Wait until the temperature reaches 40°C and add the powders, previously mixed together.
Wait until the temperature reaches 85°C.
At this stage, the machine automatically begins to cool the mixture.
At 70°C, add the cream.
Now wait for the cooling process to end. This will occur at a temperature of between +2° and +4°C.
It is preferable to allow the mixture to age for at least 6 hours before using it.
The base mix should however, be used within 3 days.
