Gelato Base - Cold Preparation
tag: utility,For the cold preparation of white bases mix we need to use:
- Sugar
- Tuttopan F100
- Milk
- Cream
Place the sugar and Tuttopan F100 in a container and mix together well.
Pour in part of the milk and blend thoroughly to create a uniform batter.
At this stage, pour in the remainder of the milk and the cream and mix together again.
The mixture is now ready to use.
